My mom-in-law likes collecting recipes and knowing that I also like to cook, she often lends me whatever new recipe she's got. The challenge for me is to cook food just enough for two. During the first few months, I always tend to cook more than what hubby and I could eat in a day. So there would be time that we will be eating the same ulam for a week. :( But now I learned my lesson. I now buy meats and poultry in half kilos - all in separate bags. This way, I could thaw only a (half-kilo) packet that would be good of us in one or two meals. I also try to find recipes for food that could be cooked multi-ways. One such example is this recipe for burger patties. Make your own burger :) The first batch I cooked were made into burgers. Just sandwich the patty in a bun along with some lettuce, fresh tomato slices, cheese and a smattering of catsup and/or mayonaise. You could play it up further with some pickes, onions, cucumber, bacon or mushrooms. Again, the combination is up to your creativity. :) Myke and I had been living off karinderia-bought ulam for the past months because of my pregnancy symptoms. Now that I am able to stay in the kitchen again, I decided to experiment with some of the fish fillets in our fridge. I am happy to report though that the experiment was a success and my hubby loved it :) Fish Lumpia Ingredients: 1k. cream dory fillets 2 medium sized carrots, minced 3 cloves garlic, minced 1 onion, minced 1 egg 1/2 sachet of Maggi Magic Sarap (optional) lumpia wrappers salt and pepper, to taste Procedure: 1. Boil the fish, season water with a bit of salt. Once cooked, cool and then flake the fish meat using a fork. 2. Combine carrots, fish meat, garlic and onions. Season with salt and pepper or use half a sachet of Maggi Magic Sarap. Mix well. 3. If you find your filling too dry, add the egg into the mixture. 4. Spoon filling onto the lumpia wrappers and roll. Seal edges with a bit of water. 5. Fry the lumpia until golden brown. Serve while still hot. You could serve this with catsup or a sweet and sour dipping sauce. I was able to make about 21 pieces of lumpia from the same number of ingredients listed above. Since we couldn't consume all of it in one meal, I'd put the pre-wrapped lumpia in an air-tight container and stored it in the fridge for times that we are craving for lumpia or are simply lazy to cook. He he he :P We had a chance to visit Father Pio's chapel in Libis upon urging of my mother-in-law. She wanted me to pay a visit since it is said that there were cases of miraculous healings of devotees. We weren't able to attend mass (we were late due to the horrendous traffic) and instead said our prayers and lighted some candles for our personal intentions. We then headed to Eastwood to have some dinner at Pasto. Dinner was good and really filling. We especially enjoyed their Pizza Enslata which was spread with pesto and the toppings were salad greens :) We then dropped by Banapple at Katipunan on the way home to indulge on some desserts. Talk about stuffing ourselves full :P This was the last dessert I made before hubby took to dieting. I still have a few stocks in the kitchen cabinet to make a few more desserts but I'm pacing myself since Myke refuses to eat carbs and sweets. If I would happen to cook food more than the usual, it's up to (poor) me to eat it all up. :( Unless perhaps it's blueberry cheesecake which is Myke's favorite. He he.
Anyway, I made this because I know Myke loves Oreos. But instead of just layering the grahams, I adopted the crumbly crust that I used to make the Mango Royale. Birthday girl, M is all smiles Our colleague M had her birthday last Saturday so the whole team decided to give her a surprise lunch treat on Friday. We headed out to Amici at the Ayala Triangle Gardens. Three of us went ahead to secure seats at the resto while J steered M towards Banapple to buy some muffins. We ordered the Mozzarella Frito and Chorizo e Spinaci pizza ahead so we could have something to munch on when J and M joins us. When the team were all seated, we added Linguine al Scampi nel Alfredo, Spaghetti White Vongole E Gamberetti Pasta and Arrabiata pizza to our orders. The appetizer was really good. I love the crunchy exterior and the chewy mozzarella. I would have wanted that they put extra pomodoro sauce on the side :) The pizza is also good. The flavors are subtle but still delicioso.
Last week, I've been hankering for coffee buns and I finally satiated my cravings when we went malling. I bought coffee buns from Roti Mum and when we were on your way out, we chanced upon Dough Joe who were offering 50% off on their bread items so we picked out a few to try including their coffee bun. So breads on hand, I decided to compare the two.
I love weekends. I get to stay in bed longer, no emails and phone calls to attend to... I have two whole days just waiting to be filled up with new discoveries and experiences. So yesterday, I did not get out of bed until 11am. My sweet hubby made brunch for us. After eating, we decided to have siesta. Our initial plans of playing badminton in the morning and watching a movie in the afternoon/evening was scrapped. We decided to stay in. Talk about lazy. Ha ha.
But there are some errands that we have to run so we did manage to haul our a**es off the comfy bed and got ready. After dropping off the comforter to the cleaners, we decided to grab a quick bite before we scout for badminton centers. We were back again to my old turf, Binondo and were discussing where we would eat when Myke suggested Masuki for some Chinese noodles. It seemed that cravings for saccharine typically associated with girls is quite the opposite for hubby and I.
I don't really like sodas, chocolates, doughnuts.. basically anything sweet with the exception though to ice cream. But I'm still quite choosy with ice cream flavors. Anyway, Myke on the other hand likes chocolates, sodas, cakes, doughtnuts. (Ugh. Thinking of them makes my teeth ache already.) And confronting him and basically banning him access to the sweets at our pantry usually turns into a debate - with him ending up with the silly grin on his face while wiping chocolate smudges off his chin and me in the sofa seething. Nakakainis makipagtalo sa matigas ang ulo. I know my MIL (mother-in-law) had been keeping watch of Myke's eating habits. And she always reminds me to be conscious of what I put on the dining table cos Myke sometimes would just be a total binger. She wanted me to prepare more healthy food choices and so, she asked me to come with her to a seminar last Sunday to be more educated on the subject of healthy eating. The seminar was entitled "Prevention and Reversal of Heart Disease" that was spearheaded by the NeedHealth Ministries. The seminar wasn't too much of a bore. There were lectures on healthy eating choices - benefits of drinking water, eating less animal-sourced products and there was also cooking demo on how to prepare vegetarian dishes. For a fee, you could also enjoy a vegetarian buffet lunch which was composed of red rice, black beans, kidney beans, camote tops and vegetarian tocino. There was also boiled bananas, some green mangoes and singkamas with vegetarian bagoong. |
